Length is the main difference. Both are 44mm wide, but a 1 1/4 leaf is 76mm long and a King Size Slim paper is 108mm. Choose 1 1/4 for a shorter, quicker roll and more leaves per booklet, and king size for a longer, slimmer one.

Are medium papers good for beginners?

Yes, 1 1/4 is a comfortable size to learn on. The leaf is wide enough to hold your mix comfortably but short enough to control as you roll and tuck. With 50 leaves in a booklet, you also have plenty to practise with before you need another pack.
